1️⃣ Preheat the Oven:
Preheat your oven to 375°F (190°C).
2️⃣ Prep the Peppers:
Brush the outside of the bell peppers with olive oil and season with salt and pepper. Place them cut side up in a baking dish.
3️⃣ Cook the Filling:
In a large skillet, cook the ground beef or turkey over medium heat until browned. Drain any excess fat.
Add the onion and garlic, and sauté for 2-3 minutes until softened.
4️⃣ Mix the Filling:
Stir in the cooked rice, diced tomatoes, corn, shredded cheese, oregano, smoked paprika, chili powder (if using), salt, and pepper. Cook for 2-3 minutes until everything is well combined and heated.
5️⃣ Stuff the Peppers:
Fill each bell pepper with the filling mixture, pressing down gently to pack it in. Top each pepper with additional shredded cheese.
6️⃣ Bake:
Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for another 10-15 minutes until the peppers are tender and the cheese is bubbly and golden.
7️⃣ Garnish and Serve:
