Potato nests with eggs and turkey ham

đź›’ Ingredients:
2 large russet potatoes, peeled and grated

1 tsp salt

½ tsp black pepper

2 tbsp olive oil or melted butter

4 large eggs

4 slices turkey ham, diced or chopped

¼ cup shredded cheese (optional – cheddar, mozzarella, or your choice)

Cooking spray or oil for greasing

Optional garnish: chopped chives, parsley, or a dash of paprika

🧑‍🍳 Instructions:
1. Prep the potatoes:
Preheat oven to 400°F (200°C).

Grate the potatoes and squeeze out excess moisture using a clean kitchen towel or paper towels.

In a bowl, toss the potatoes with salt, pepper, and olive oil.
