Potato nests with eggs and turkey ham

2. Form the nests:
Grease a muffin tin (or use silicone muffin cups).

Divide the grated potato mixture into 4 muffin cups and press firmly along the bottom and sides to form a nest shape.

Bake for 15–18 minutes, or until edges are golden and slightly crispy.

3. Add fillings:
Remove from oven, sprinkle chopped turkey ham and a little cheese (if using) into each nest.

Carefully crack one egg into each nest.

4. Bake again:
Return to the oven and bake for 7–10 minutes, depending on how runny or set you want the yolks.

5. Serve:
Let them cool slightly, then gently remove from the tin.

Garnish with chopped herbs or a pinch of paprika for color.
