These Tuscan-inspired pita pizzas are a quick and delicious meal, featuring tender garlic chicken, fresh herbs, and melted cheese all on a crispy pita base. Perfect for busy weeknights or casual lunches!
Ingredients
1 large chicken breast (or 1½ cups cooked chicken), thinly sliced
1 tbsp olive oil
2 cloves garlic, minced
Salt and pepper, to taste
1 tsp Italian seasoning
2 whole-wheat or regular pita breads
1/2 cup marinara or tomato sauce
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese (optional)
Handful of fresh spinach or arugula (optional)
Cherry tomatoes, halved (optional)
How to Make
1️⃣ Cook the chicken
In a skillet over medium heat, heat olive oil. Add the garlic and sauté for 30 seconds.
Add the chicken slices, season with salt, pepper, and Italian seasoning. Cook until golden and fully cooked (about 5–6 minutes). Set aside.
2️⃣ Assemble the pizzas
Preheat oven to 200°C (400°F).
Place pita breads on a baking tray. Spread each with tomato sauce, top with mozzarella, then add the cooked chicken.
Add Parmesan, spinach, and cherry tomatoes if using.
