Ingredients:
– 200g sliced mushrooms
– 40g red bell pepper
– 40g green bell pepper
– 40g yellow bell pepper
– 1 bunch of spring onions
– 100ml vegetable broth
– 160g herb cream cheese
– Salt and pepper to taste
– 250g long-grain rice
– 2 tbsp vegetable oil for frying
Instructions:
1. Heat the vegetable oil in a large skillet over medium-high heat.
2. Add the sliced mushrooms to the skillet and fry for about 5 minutes until golden brown.
