Coleslaw for winter

Ingredients:

Veggies:

2 cups shredded green cabbage

1 cup shredded red cabbage

1 large carrot, grated

1 apple (like Fuji or Honeycrisp), julienned

½ bulb of fennel, finely sliced (optional but adds a great anise flavor)

¼ cup chopped parsley or fresh dill

¼ cup toasted walnuts or pecans (optional)

Dressing:

⅓ cup mayonnaise (or Greek yogurt for a lighter version)

1 tbsp whole grain mustard

1 tbsp apple cider vinegar

1 tsp honey or maple syrup

Salt and black pepper to taste

A pinch of ground cinnamon or nutmeg (optional, but lovely for a winter feel)
