Ingredients:
300 g of 00 flour
150 ml of warm water
10 g of fresh brewer’s yeast (or 3 g of dry yeast)
1 teaspoon of sugar
2 tablespoons of olive oil
1 pinch of salt
Tomato sauce to taste
Mozzarella or other cheese to taste
Ingredients of your choice for filling (ham, olives, mushrooms, grilled vegetables, etc.)
Instructions:
Preparation of the dough: In a bowl, dissolve the brewer’s yeast in the warm water together with the sugar. Gradually add the flour, oil and salt, and start kneading until the dough is smooth and homogeneous. Cover the dough with a cloth and let it rise in a warm place for about 1 hour, until it doubles in volume.
Divide and roll out the dough: After the dough has risen, take it and divide it into small portions (about 6-8 balls). Roll out each ball with a rolling pin until it has an elongated shape, resembling a “tongue”.
Cooking in a pan: Heat a non-stick pan and, without adding oil, cook the pizza tongues one at a time. Cook each side for about 2-3 minutes, until bubbles form and the base is lightly golden.
Filling: While you cook the second side, add the tomato sauce, mozzarella and the ingredients of your choice directly on the pizza. Cover the pan with a lid to allow the mozzarella to melt and the pizza to become very hot.
Service: When the cheese is completely melted and the pizza is cooked through, remove from the pan and serve immediately.
