Ingredients (for about 4 servings):
For the cookie layer:
150g butter cookies or whole-wheat cookies
50g melted butter
For the cream:
250g mascarpone or cream cheese
200ml heavy cream
2 tbsp powdered sugar (to taste)
1 tsp vanilla extract or vanilla sugar
Zest of ½ organic lemon (optional for freshness)
For the fruit topping:
200g berries (e.g., strawberries, raspberries, blueberries)
1-2 tbsp sugar or honey
1 tsp lemon juice
Prepare the cookie base:
Finely crumble the cookies (in a blender or with a freezer bag and rolling pin).
Mix with the melted butter.
Divide the mixture between the glasses and press down lightly.
Make the cream:
Whip the cream until stiff.
Mix the mascarpone with the powdered sugar, vanilla, and lemon zest until smooth.
Carefully fold in the whipped cream.
