Ingredients:
2½ to 3 pounds Yukon Gold or Russet potatoes

4 tablespoons unsalted butter (plus more for topping)

½ cup sour cream or 4 oz cream cheese (or a combo!)

⅓ to ½ cup milk or heavy cream, warmed

Salt and freshly ground pepper to taste

Optional: garlic powder or roasted garlic for flavor
