Zesty Pickled Green Beans with Garlic and Dill

🥒 Zesty Pickled Green Beans with Garlic & Dill
🕒 Prep Time: 20 minutes
⏲️ Cook Time: 5 minutes
❄️ Chill Time: 2 days minimum (for best flavor)
🍽️ Yield: 2–3 pint jars
🧂 Ingredients
1 lb (450 g) fresh green beans, trimmed

3 cloves garlic, peeled and smashed

3–4 sprigs fresh dill (or 1 tsp dried dill per jar)

1–2 tsp red pepper flakes (adjust for heat)

1 tsp black peppercorns (per jar)

¾ cup white vinegar

¾ cup water

1 tbsp pickling salt (or kosher salt, not iodized)

Optional: 1 tsp mustard seeds or coriander seeds per jar

Optional: lemon zest or a strip of lemon peel (adds brightness)

👩‍🍳 Instructions
1. Blanch the Green Beans (Optional but recommended)
Boil a pot of water. Add green beans and blanch for 1 minute.

Transfer to an ice bath to stop cooking. Drain well.

2. Sterilize Jars
