Vegetable Shank Stew Recipe

Ingredients:

4 lamb or veal shanks

3 carrots

4 potatoes

3 cloves of garlic

1 onion

2 tomatoes (or 2 tbsp of concentrate)

Fresh herbs (parsley, thyme, bay leaf)

2 tbsp of olive oil

1 glass of white wine (optional)

1 L of broth (poultry or vegetable)

Salt, pepper
Preparation steps:

Peel the carrots and cut them into slices.

Peel the potatoes and cut them into pieces.

Thinly slice the onion and

crush the garlic cloves.
Brown the meat

Heat a casserole dish with

the olive oil.
Brown the shanks

on all sides until they are nicely colored.
Add the flavorings

and garlic

to the casserole. Brown them until they are translucent.

the tomatoes or concentrate and mix well.
Deglaze

(optional) and let reduce for a few minutes.
Cook the stew
