Three Minute Jam: low sugar, low fuss, and thick, like jam. The most delicious jam

Prepare the fruit: If using large fruits like strawberries or peaches, chop them into small pieces. If you’re using berries, just give them a quick rinse.

Cook the fruit: In a small saucepan, cook the fruit over medium heat for about 2 minutes, stirring occasionally, until the fruit softens and starts releasing juice.

Mash & thicken: Mash the fruit with a fork or potato masher to your desired consistency. If it’s looking too runny, stir in the chia seeds. They’ll help absorb the extra liquid and thicken the jam.

Sweeten & finish: Add your sweetener (honey or maple syrup) and lemon juice. Stir to combine. Cook for another minute until everything thickens up nicely.

Cool & store: Let it cool down before transferring to a jar. It should thicken more as it cools. Store in the fridge for up to a week.
