Spinach and feta rolls are indeed a delightful treat! They’re versatile, satisfying, and perfect for various occasions. Here’s a basic recipe and some tips to make them even more delicious:
Ingredients:
For the Filling:
500g fresh spinach (or 250g frozen, thawed and squeezed dry)
200g feta cheese, crumbled
1 onion, finely chopped
2-3 cloves garlic, minced
1 egg, lightly beaten
1/4 cup grated Parmesan cheese (optional)
Salt and pepper to taste
Pinch of nutmeg (optional)
Olive oil for cooking
For the Rolls:
1 package (about 450g) puff pastry, thawed
1 egg, beaten (for egg wash)
Sesame seeds, or poppy seeds for topping (optional)
Instructions:
Prepare the Filling:
If using fresh spinach, wash it thoroughly. Heat a little olive oil in a large skillet. Add the chopped onion and cook until softened. Add the minced garlic and cook for another minute.
Add the spinach to the skillet and cook until wilted. If using frozen spinach, ensure it’s well squeezed dry before adding it to the skillet.
Remove from heat and let it cool slightly.
In a bowl, combine the cooked spinach mixture, crumbled feta cheese, beaten egg, Parmesan cheese (if using), salt, pepper, and nutmeg (if using). Mix well.
