Add the water, milk, yeast, and sugar to a suitable mixing bowl and mix. Add the oil, flour, and salt in a controlled manner and knead into a soft dough. Cover it and let it rest for 15 minutes.
Remove the air from the fermented dough and divide it into 15-16 equal meringues.
Mix all the ingredients for the inner mortar in a suitable bowl. Using a rolling pin, open the meringues so they’re lengthwise. Shape them by adding the inner mortar, folding the edges, and bringing the ends together.
Place the shaped pitas on a baking sheet lined with parchment paper. Brush the edges with egg yolk.
Bake in an oven preheated to 200 degrees. Spread butter on the edges of the pitas straight from the oven and serve.
