The real onion soup*

🧅 Classic French Onion Soup (Soupe à l’Oignon Gratinée)
🕐 Time: ~2 hours
🍽 Serves: 4

Ingredients:
6 large yellow onions, thinly sliced

3 tbsp unsalted butter

1 tbsp olive oil

1 tsp sugar (helps with caramelization)

Salt and pepper, to taste

2 garlic cloves, minced

1/2 cup dry white wine (or dry sherry)

6 cups beef stock (preferably homemade or low-sodium)

2 sprigs thyme

1 bay leaf

Baguette slices, toasted

1 ½ cups grated Gruyère cheese (or a mix of Gruyère and Comté)

Instructions:
1. Caramelize the Onions (the soul of the soup):
In a large heavy pot or Dutch oven, melt the butter with olive oil over medium-low heat.

Add the sliced onions and stir to coat.

Add the sugar and a pinch of salt.
