Superb avocado mayonnaise, an easy recipe

Peel the avocado, cut it in half, and remove the pit. Cut the flesh into slices.
Transfer the flesh to your blender, add the olive oil, lime juice, and zest.
Add salt and pepper.
Blend well until you get a firm and frothy mayonnaise.
Transfer the avocado mayonnaise to a bowl and refrigerate until ready to serve.
