Cut them in half lengthwise. Use a knife to gently remove the seeds and white membranes inside. This will release more flavor. ▪️ Cooking the semolina:
In a saucepan, bring salted water to a boil (about 1.5 times the volume of semolina you are using).
Pour the semolina into the boiling water. Stir quickly, then cover and remove from heat. Let stand for 5 minutes so the semolina absorbs all the water.
After 5 minutes, fluff the semolina with a fork. This helps avoid lumps.

In a skillet, heat the olive oil over medium heat. Add the chopped onion and cook until translucent (about 3-4 minutes).
Add the diced zucchini and tomato, then sauté for about 5 minutes until the vegetables are slightly tender. Add the ground cumin, salt, and pepper, mixing well so that the spices evenly coat the vegetables.

In a large bowl, combine the cooked semolina with the vegetable and onion mixture. Stir well to blend the flavors.
Check the seasoning and adjust by adding more salt or spices if necessary.
▪️ Stuff the peppers:
Take the pepper halves and place them on a baking sheet lined with parchment paper to prevent them from sticking.
Generously stuff each half with the semolina and vegetable mixture. Make a small indentation in the center of each pepper to crack an egg into.
▪️ Oven baking:
Bake the stuffed peppers in a preheated oven at 180°C for about 20 minutes. Keep an eye on the cooking time: the peppers should be tender and the egg slightly set.
If you prefer your eggs cooked through, you can extend the cooking time for a few minutes.
▪️ Serving:
Once cooked, remove the peppers from the oven and let them rest for a few minutes.
Serve warm, garnished with fresh cilantro or parsley. A squeeze of fresh lemon juice can also add a nice touch of flavor.
