Preheat your oven to 180°C (350°F).
Prepare the peppers: Cut off the tops and remove the seeds. Rinse and dry them.
Sauté the onion and garlic in olive oil until soft. Add a pinch of salt and pepper.
Place the peppers in a baking dish. If they don’t stand upright, you can trim the bottoms slightly.
Add the sautéed onion and garlic to the bottom of each pepper.
Crack one egg directly into each pepper.
Sprinkle with herbs, a bit of salt and pepper, and grated cheese if desired.
Bake for 25–30 minutes, or until the egg is cooked to your liking.
