Instructions:
Preparation:
Preheat the oven to 350°F (175°C). Lightly grease your loaf pan(s).
Mix Dry Ingredients:
In a medium bowl, sift together the flour, baking powder, salt, and cinnamon.
Prep the Strawberries:
Toss the diced strawberries with 2 tablespoons of flour. Set aside.
Cream the Wet Ingredients:
In a large bowl, cream together the sugar, vegetable oil, and eggs until smooth and well combined.
Combine Batter:
Gradually mix the dry ingredients into the wet mixture until fully incorporated.
Add Strawberries:
Gently fold the floured strawberries into the batter until evenly distributed.
Create the Swirl:
Pour the batter into the prepared loaf pan(s). Spoon the strawberry jam on top and use a knife to swirl it into the batter for a marbled effect.
Bake:
For two smaller loaves: Bake 40-50 minutes.
For one large loaf: Bake 55-65 minutes.
If the tops brown too quickly, tent with foil for the last 15-20 minutes of baking.
Test with a toothpick—when it comes out clean, it’s done.
Cool & Enjoy:
Allow the loaf to cool in the pan before slicing. Enjoy warm or at room temperature.
