π Ingredients for 4 servings:
For the pancakes:
πΎ 200 g wheat flour
π₯ 300 ml milk
π₯ 2 eggs
π± A pinch of salt
π§ 1 tablespoon butter (melted)
For the filling:
π₯¬ 2 large leeks (white part, finely chopped)
π§ 2 cloves garlic (chopped)
π§ 1 tablespoon butter
π₯€ 100 ml cream 30%
π§ 150 g goat cheese (crumbled)
πΆοΈ Pinch of chili (optional)
πΏ Fresh thyme for garnish
π§ Salt and pepper to taste
For baking:
π§ 50 g grated GruyΓ¨re cheese or other hard cheese

1οΈβ£ Preparation of the pancakes:
In a bowl, mix the flour, salt, milk, eggs and melted butter until smooth.
Heat a pan with a little butter and fry the thin pancakes on both sides until golden brown. Set aside.
2οΈβ£ Preparation of the filling:
Melt the butter in a pan, add the sliced ββleek and garlic. Fry on low heat for about 5 minutes, until the leek is soft.
Add the cream and cook for 2-3 minutes until the sauce thickens.
Add the goat cheese and stir until the cheese has melted. Season with chili pepper, salt and pepper.
3οΈβ£ Wrapping and baking:
Place the leek-cheese filling in the center of each pancake, fold the edges inwards and roll up.
Place the pancakes in a baking dish, sprinkle with grated Gruyère cheese and bake in a preheated oven at 180°C for 15 minutes, until the cheese is melted and golden brown.

Serve warm, garnish with fresh thyme. Delicious with a light salad or a glass of white wine. π₯
