Snow alfajores
1. Prepare the dough:
Mix the wet ingredients: In a large bowl, create the butter and sugar until you get a smooth consistency. Add the whole egg, egg yolks and vanilla gasoline and beat again until it is incorporated.
Add the dry ingredients: sift together the flour, chemical yeast, sodium bicarbonate and cocoa. Gradually add the dry ingredients to the cream by gently mixing with the hands until a smooth paste is obtained. Do not knead too much to ensure the lightness of alfajores.
Leave to stand: wrap the dough in food film and place it in the refrigerator for 30 minutes.
2. Shape and cook Alfajore lids:
Shape the dough: Spread the dough with a roller on a floured surface until it is 1 cm thick. Cut out circles of the desired size and place them on a baking tray covered with baking paper.
Cooking: preheat the oven to 180oC and bake the circles for 10 to 12 minutes, taking care not to brown them too much. Remove from the oven and allow to cool completely.
3. 3. Fill in the Alfajores:
Take a cold lid, spread a generous layer of dulce from leche in the center and cover with another lid. Book.
4. Preparation of snow cover:
Prepare the syrup: In a small saucepan, heat the ordinary sugar with the water until a light syrup (threaded tip) is obtained.
Prepare the icing: beat the whites into snow. Gradually add the icing sugar and lemon juice, beating until the mixture is smooth. While whipping, slowly add the hot syrup until completely absorbed.
Cover alfajores: Tighten alfajores in the coating completely. Allow to dry in a cool place until the coating is properly compacted.

Total time: 1 hour 12 minutes

Gives about 15 medium alfajores.
