Slow Cooker Pepper Steak with Mushrooms

Ingredients

  • 2 lbs beef round steak, cut into thin strips
  • 2 tablespoons olive oil
  • 2 bell peppers (one red, one green), sliced into strips
  • 1 large onion, sliced
  • 8 oz mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 1/4 cup soy sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
