π₯ Simple Cassava Gnocchi Recipe
Ingredients:
500g (about 1 lb) cassava (also called yuca or manioc), peeled and chopped
1 egg (optional, helps with binding)
1/2 to 1 cup cassava flour or gluten-free flour (as needed)
Salt, to taste
Optional Add-ins:
A bit of olive oil or butter (for richness)
Grated parmesan (for flavor, if not dairy-free)
πͺ Instructions:
Boil the Cassava:
Peel and chop cassava into chunks.
Boil in salted water until fork-tender (20β30 minutes).
Remove any tough, fibrous core from the center of the root.
Mash thoroughly or pass through a ricer while warm.
Form the Dough:
Let the mash cool slightly.
Add egg (if using), a pinch of salt, and begin adding flour gradually.
Knead gently until it forms a soft dough. Add more flour if it’s too sticky, but avoid overworking it.
