300 g icing sugar
30 g salted butter
30 cl single cream

Preparation:
Crush the cookies into a fine powder using a blender. For the caramel, heat the icing sugar in a saucepan until golden brown. Off the heat, gradually add the single cream, stirring constantly.
Incorporate the salted butter, cut into small pieces, into the caramel and mix until smooth.
Separate the egg yolks from the whites. In a bowl, beat the mascarpone with the sugar and vanilla sugar. Add the egg yolks.
Beat the egg whites until stiff peaks form, then gently fold them into the mascarpone mixture.
In glasses, start with a layer of powdered biscuits, then add a generous amount of salted caramel, followed by a layer of mascarpone. Repeat these steps until all the ingredients are used up, finishing with a layer of mascarpone.
Refrigerate the glasses for at least 3 hours to allow the tiramisu to set and the flavors to blend. Just before serving, sprinkle a little cocoa powder on top of each glass for the finishing touch.
