Preheat the oven to 160°C (thermostat 5-6).
Prepare the meat: Cut the pork into pieces if necessary. Salt and pepper the pieces of meat.
Heat the oil in a large ovenproof dish. Add the meat and brown on all sides for about 10 minutes.
Remove the meat and set aside. Add the chopped onions and garlic to the same baking dish. Brown until translucent.
Deglaze with the beer: Pour the beer into the baking dish to loosen the cooking liquid, then add the mustard, maple syrup, thyme, and bay leaf.
Return the meat to the baking dish and cover. Cook in the oven for 2 to 3 hours, basting the meat occasionally with the sauce.
Check for doneness: The meat should be tender and easily fluffed with a fork. If the sauce is too runny, reduce it over low heat on the stove before serving.
Serve warm, with mashed potatoes, roasted vegetables, or rice.
Tip:
For an even creamier sauce, add a spoonful of cold butter toward the end of cooking to thicken the sauce.
This braised pork with beer and maple syrup is a rich and filling dish that will delight your guests at your festive meals.
