Really good! My mother has told me many times that I have to do this again and I will not hesitate!

Ingredients:
– 4 boneless pork chops (about 1 inch thick)
– Salt and freshly ground black pepper, to taste
– 1 tablespoon olive oil
– 4 pineapple rings (canned or fresh)
– 1/4 cup brown sugar
– 1/4 cup soy sauce
– 1 clove garlic, minced
– 1 teaspoon grated fresh ginger (optional)
Directions:
1. Preheat oven to 375 degrees Fahrenheit and season pork chops with salt and pepper.
2. Heat olive oil in a large ovenproof skillet over medium heat. Add pork chops and sear until golden brown on each side, about 3-4 minutes per side.
3. While pork chops are searing, combine brown sugar, soy sauce, garlic, and ginger (if using) in a small bowl until glazed.
4. Once pork chops are browned, place a pineapple ring on each chop.
5. Drizzle the glaze over the pork chops and pineapple rings in the pan.
6. Place the pan in the preheated oven and bake for 20 minutes, or until the pork chops are cooked through and the internal temperature is 63 degrees Celsius (145 degrees Fahrenheit).
7. Remove the pan from the oven and let the pork chops rest for a few minutes before serving.
