Queso Cauliflower Bake
Preheat your oven to 400°F (200°C).
Toss the cauliflower florets in a large bowl with olive oil, salt, and pepper.
Spread the cauliflower on a baking sheet and roast for about 20 minutes, until tender and slightly golden around the edges.
In a separate bowl, combine the cheddar cheese, mozzarella cheese, cream cheese, sour cream, garlic powder, onion powder, and paprika.
Once the cauliflower is done roasting, fold it into the cheese mixture until well coated.
Transfer the mixture to a greased baking dish.
Bake for 25-30 minutes, or until the top is golden and bubbly.
Garnish with the chopped parsley before serving.
Variations & Tips
For a spicier kick, add some chopped jalapeños to the cheese mixture. You can also mix in some cooked and crumbled bacon for added flavor and texture. If you’re looking for a lower-carb version, substitute cauliflower with broccoli, or mix the two for a blend of flavors. For an extra crispy topping, sprinkle some panko breadcrumbs over the cheese before baking.
