Ingredients
For the pastry:
2 ½ cups (300g) all-purpose flour

1 tsp salt

1 cup (225g) cold unsalted butter, cubed

4–6 tbsp cold water

For the filling:
4 medium potatoes (Yukon Gold or other waxy type), thinly sliced

2 large onions, thinly sliced

2 tbsp butter or olive oil

Salt and black pepper to taste

1 tsp dried thyme or rosemary (optional)

½ cup (120ml) cream or milk (optional, for extra richness)
