Peachy Keen Bars

Instructions:

Preheat your oven to 350°F (175°C). Spray a 9×13” pan with non-stick spray.

In a large bowl, mix cake mix, butter, and 1 egg using a fork until crumbly.

Set aside 1 1/2 cups of the crumb mixture for the topping.

Press the remaining crumb mixture into the bottom of the prepared pan.

Bake the crust for 8 minutes.

Dice the drained peach slices and evenly spread them over the baked crust.

In a mixing bowl, beat cream cheese, sugar, the remaining egg, and vanilla extract until smooth.

Spread the cream cheese mixture evenly over the peaches.

Sprinkle the reserved crumb mixture on top.

Bake for 30 minutes, or until lightly golden.

Chill for at least 30 minutes before serving. Store leftovers in the refrigerator.

Tips:

If you accidentally leave the peaches sliced instead of dicing them, it still works—just expect larger bites of fruit.

Can be cut into smaller pieces if you want to serve more than 12.
