Orange Creamsicle Cupcakes with Orange Buttercream Frosting

Directions:

Cupcake Creation:

  1. Preheat oven to 350°F (175°C). Line a cupcake pan with paper liners.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, using a hand mixer or stand mixer, cream together the butter and sugar until light and fluffy.
  4. Mix in yogurt (or sour cream) until well combined.
  5. Add egg whites one at a time, mixing well after each addition.
  6. Combine orange juice and milk in a small bowl.
  7. Gradually add the dry ingredients to the butter mixture, alternating with the orange juice mixture, beginning and ending with the dry ingredients. Mix until just incorporated.
  8. Fold in vanilla or orange extract and grated orange zest until evenly distributed.
  9. Divide the batter evenly among the prepared cupcake liners, filling each about 2/3 full.
  10. Bake in preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  11. Remove cupcakes from pan and allow to cool completely on a wire rack before frosting.

Orange Buttercream Frosting:

  1. In a medium bowl, use a hand mixer or stand mixer to beat the softened butter until creamy and smooth.
  2. Gradually add powdered sugar, one cup at a time, beating well after each addition.
  3. Mix in orange juice, vanilla or orange extract, and orange food coloring (if using), until frosting is smooth and fluffy.
  4. If the frosting is too thick, add a little more orange juice, or if it’s too thin, add more powdered sugar until desired consistency is reached.

Assembly of Delight:

  1. Once cupcakes are completely cooled, pipe or spread the orange buttercream frosting on top of each cupcake.
  2. Garnish with a sprinkle of grated orange zest or a small orange slice if desired.

  • For lighter cupcakes, substitute a portion of the flour with cornstarch.
