Orange Creamsicle Cupcakes with Orange Buttercream Frosting
Directions:
Cupcake Creation:
- Preheat oven to 350°F (175°C). Line a cupcake pan with paper liners.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
- In another bowl, using a hand mixer or stand mixer, cream together the butter and sugar until light and fluffy.
- Mix in yogurt (or sour cream) until well combined.
- Add egg whites one at a time, mixing well after each addition.
- Combine orange juice and milk in a small bowl.
- Gradually add the dry ingredients to the butter mixture, alternating with the orange juice mixture, beginning and ending with the dry ingredients. Mix until just incorporated.
- Fold in vanilla or orange extract and grated orange zest until evenly distributed.
- Divide the batter evenly among the prepared cupcake liners, filling each about 2/3 full.
- Bake in preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Remove cupcakes from pan and allow to cool completely on a wire rack before frosting.
Orange Buttercream Frosting:
- In a medium bowl, use a hand mixer or stand mixer to beat the softened butter until creamy and smooth.
- Gradually add powdered sugar, one cup at a time, beating well after each addition.
- Mix in orange juice, vanilla or orange extract, and orange food coloring (if using), until frosting is smooth and fluffy.
- If the frosting is too thick, add a little more orange juice, or if it’s too thin, add more powdered sugar until desired consistency is reached.
Assembly of Delight:
- Once cupcakes are completely cooled, pipe or spread the orange buttercream frosting on top of each cupcake.
- Garnish with a sprinkle of grated orange zest or a small orange slice if desired.

- Ensure all ingredients are at room temperature for best results.
- For lighter cupcakes, substitute a portion of the flour with cornstarch.
- Adjust the frosting consistency with additional powdered sugar or orange juice to suit your preference.
