My kids won’t eat this dish any other way!

Preheat your oven to 400°F (200°C).
Place the halved Brussels sprouts in a large mixing bowl.
Drizzle the olive oil over the sprouts and add the minced garlic, salt, and black pepper. Toss until the sprouts are evenly coated.
Spread the Brussels sprouts in a single layer on a baking sheet.
Roast in the preheated oven for 20-25 minutes, or until they are tender and golden brown, stirring halfway through.
Remove from the oven and sprinkle the grated Parmesan cheese over the hot sprouts. Toss to combine.
Drizzle with lemon juice before serving, if desired, for a fresh, tangy finish.
Variations & Tips
For a spicy kick, add a pinch of red pepper flakes to the Brussels sprouts before roasting. If you prefer a nuttier flavor, try substituting the Parmesan with Pecorino Romano. For a vegan version, replace the Parmesan with nutritional yeast. You can also add a handful of toasted pine nuts or slivered almonds for added texture and flavor. Experiment with different herbs like thyme or rosemary to give the dish a unique twist.
