My hubby can’t get enough of this one!

Heat the olive oil in a skillet over medium heat. Add the mushrooms and garlic, seasoning with a pinch of salt and pepper. Sauté until the mushrooms are golden and tender, about 8 minutes. Remove from heat.
Spread butter on one side of each slice of bread. On the unbuttered side of two slices, distribute half of the mozzarella and Parmesan cheeses.
Evenly distribute the sautéed mushrooms over the cheese. Top with the remaining cheese and cover with another slice of bread, buttered side facing out.
Heat a clean skillet over medium heat. Place the sandwiches in the skillet, and grill until each side is golden brown and the cheese is melted, about 3-4 minutes per side.
Variations & Tips
Feel free to switch up the cheeses based on what you have in your fridge. Gruyere, cheddar, or provolone would also melt beautifully in this sandwich. For a touch more flavor, add a sprinkle of fresh thyme or rosemary to the mushrooms while they cook. If you’re in the mood for a bit of extra crunch, add some thin slices of red onion, or for a punchier bite, a few leaves of arugula or spinach could be added right before serving.
