Mumbai Grilled Sandwich

đź›’ Ingredients

For the mint chutney:
• 500 ml fresh mint leaves
• 2 tablespoons green chilies (adjust to taste)
• 1 garlic clove
• 1 piece fresh ginger (10 cm), peeled and chopped
• 1/2 lemon, juiced
• 1 pinch salt
• 2 to 3 tablespoons water (as needed for blending)

For the sandwich:
• 4 slices sourdough or white sandwich bread
• 1/2 English cucumber, thinly sliced
• 6 cocktail tomatoes, thinly sliced
• 1/2 red onion, thinly sliced
• 50 g grated cheddar or other melting cheese (such as Monterey Jack)
• Butter (to spread on the bread)
• Mint chutney (to place on top)

Spices (to sprinkle between the layers):
• 1/2 teaspoon ground coriander
• 1/2 teaspoon ground cumin
• 1/2 teaspoon cinnamon
• 1/2 teaspoon freshly ground black pepper
• 1/2 teaspoon kosher salt
