To prepare them, simply mix the indicated ingredients in a bowl, then with slightly damp hands form many cylindrical meatballs of the same weight and then skewer them one by one, after having covered them with the cured meat, with long wooden skewers. Once ready, you can serve the skewers with a portion of fried potatoes , gratin vegetables or a mixed seasonal salad, or you can offer them for a brunch or a buffet aperitif .
The bacon , browned on the fire, will seal the meat, making the dish crunchy on the outside and tender and juicy at the heart. We have flavored the preparation with a sprig of chopped parsley and freshly ground pepper but, alternatively, you can opt for your favorite spices and herbs, such as sweet paprika, rosemary, dried oregano, squeezed garlic, curry, chilli powder, and so on.
If the dough is too soft, you can adjust the consistency with more breadcrumbs or you can make it tastier by mixing the grated parmesan with a little seasoned pecorino. In our recipe we cooked the skewers in a pan with a drizzle of oil but, if you wish, you can place them on a baking tray and put them in a hot oven: they will still be delicious.

How to prepare minced meat skewers
Step 1
Collect the minced meat in a bowl and add the egg1.

Advice
For a delicious and stringy result you can add a cube of smoked scamorza or other string cheese to the center of each meatball while, for a lighter variant, you can replace the bacon with thinly sliced sweet raw ham.
We opted for beef pulp but, alternatively, you can choose a mixed minced veal and pork or, if you love white meat, you can use chicken or turkey.
If you prefer, you can also prepare the skewers in the oven or in the air fryer . In the first case you will have to place them on a baking tray and bake them at 180°C for 25 minutes while, in the second, it will be sufficient to place them inside the appliance basket and cook them at 180°C for a quarter of an hour. Whatever your preference, we suggest turning the meat halfway through cooking and not adding oil: the bacon, in fact, will naturally release its fat at high temperatures.
