1. First, finely chop the tomatoes and put them back in the juice. Then drain the corn on a sieve. Clean the peppers, remove the seeds, wash, dry and cut into small pieces. Peel and dice the onions.
2. Next, heat the olive oil in a pan and fry the minced meat in it until it is hot. Add the onions and peppers and cook everything for about 4 to 5 minutes until the meat is cooked through. Season well with salt, pepper, cayenne pepper and cumin.
3. Now add the tomato paste, fry briefly, then stir in the chopped tomatoes with the juice and the corn. Let the mixture simmer for a few minutes until almost all of the liquid has evaporated.
4. Now season with the spices and a little sugar. Then spread the tortillas with the crème fraîche and spread the minced meat mixture evenly on top. Sprinkle with a little grated cheese. Roll the tortillas up into burritos and place in a baking dish.
1. Finally, sprinkle with the remaining grated cheese and bake in an oven preheated to 200 degrees for 4 – 5 minutes until the cheese has melted. Serve immediately.
