Preheat oven to 180°C (top/bottom heat).
Finely chop the onion & garlic and sauté in a pan with the olive oil until translucent.
Add the spinach and sauté briefly until it wilts. If using frozen spinach, squeeze it well beforehand and simply add it to the onion.
Remove the pan from the heat. Crumble the feta and mix it with the cottage cheese, eggs, oregano, thyme, salt, and pepper in a bowl. Stir in the spinach.
Optional: Now stir in the sun-dried tomatoes or olives.
Transfer everything to a baking dish and sprinkle with some grated cheese, if desired.
Bake for about 30–35 minutes, until the top is golden brown.
💡 Tips:
Serve with fresh baguette or a light tomato salad.
For a low-carb version, simply serve it on its own or combine it with zoodles.
If you like, you can also sprinkle with toasted pine nuts.
