Mediterranean Salmon Patties 🐟🌿

Combine all patty ingredients in a bowl. Mix until just combined. If the mixture feels too wet, add a little more breadcrumbs.

Form into 6–8 small patties using your hands.

Heat olive oil in a nonstick skillet over medium heat.

Cook patties for about 3–4 minutes per side, or until golden brown and crispy.

Serve warm, optionally topped with yogurt sauce, a squeeze of lemon, or over a salad or pita.
