Ingredients:
- 600 g cauliflower, cut into bite-sized florets
- 1 egg
- 150 g plain Greek yogurt (or thick natural yogurt)
- 2 tbsp extra virgin olive oil
- 1/2 tsp sea salt
- 1/4 tsp freshly ground black pepper
- 1/2 tsp dried oregano
- 1/4 tsp dried thyme (optional)
- 1 clove garlic, finely minced or grated (or 1/2 tsp dried garlic)
- 50 g crumbled feta cheese (or shredded mozzarella for a milder taste)
- Fresh parsley or basil, chopped (for garnish)
Instructions:
1. Preheat your oven to 200°C (392°F). Grease a baking dish with a little olive oil.
2. Blanch the cauliflower:
Bring a pot of salted water to a boil.
Add cauliflower florets and boil for just 1–2 minutes until slightly tender.
Drain and set aside to cool slightly.
