Meatloaf Wellington – Easy, Crispy and Delicious!

1. Prepare the meatloaf
– Combine all the meatloaf ingredients in a bowl. Knead well until well blended.
– Form it into a compact, oval roll.

2. (Optional) Pre-bake
– For extra crunch and a crispy crust: Bake the meatloaf in the oven at 180Β°C for 10–15 minutes, then let it cool.
– Or simply leave it raw – it will also cook in the oven in puff pastry.

3. Prepare the puff pastry
– Roll out the puff pastry on baking paper.
– (Optional) Place a few slices of ham or cheese in the center.
– Place the meatloaf on top and fold the pastry around it.
– Seal the seams well and place seam-down on a baking sheet. Decorate with additional pastry figures, if desired.

4. Finish and bake
– For a nice shine, brush the whole thing with the egg yolk mixture.
– If necessary, pierce a small hole in the top for steam.
– Bake in a preheated oven at 200Β°C (top/bottom heat) for 30-40 minutes until the puff pastry is golden brown.
