Lobster Thermidor Bliss 🧀🦞

1. Prepare the Lobster Shells
Carefully cut lobsters in half lengthwise.

Remove the meat and chop into bite-sized pieces.

Clean the shells and set aside for stuffing.

2. Make the Creamy Sauce
In a skillet, melt butter over medium heat.

Sauté shallot and garlic until soft.

Stir in flour to form a roux and cook for 1 minute.

Gradually whisk in white wine (and cognac, if using), then cream.

Add mustard, lemon juice, paprika, salt, and pepper.

Let it simmer until slightly thickened (about 5 minutes).

Stir in cheese and lobster meat until just heated through. Remove from heat.

3. Stuff and Broil
Spoon the lobster mixture back into the shells.

Sprinkle with extra cheese.

Broil (or bake at 450°F / 230°C) for 5–7 minutes until golden and bubbly.

4. Serve & Garnish
Top with chopped parsley or chives.

Serve with crusty bread, garlic mashed potatoes, or a crisp green salad.
