Lemon Madeleines

Ingredients:

3 eggs

150 g sugar

150 g flour

125 g melted butter

Zest of 1 lemon (preferably organic)

1 teaspoon baking powder

1 pinch salt

1 tablespoon lemon juice (optional, for a more tangy taste)

Instructions:

Preparing the batter:

In a bowl, beat the eggs with the sugar until pale and foamy.

Add the lemon zest and juice (if using).

Add the dry ingredients:

Sift the flour, baking powder, and pinch of salt.

Gently fold them into the egg-sugar mixture with a spatula, without overworking the batter.

Incorporate the butter:

Pour the warm melted butter into the batter and mix gently until smooth.
