Pat chicken quarters dry with paper towels.
Place in a large zip-top bag or dish.
Pour marinade over chicken and rub well to coat.
Let it marinate for at least 30 minutes (up to 12 hours in the fridge for deeper flavor).
Bake:
Arrange chicken skin-side up on a baking sheet or in a roasting pan.
Pour extra marinade over the top.
Bake uncovered for 40–50 minutes, or until internal temp hits 175°F (80°C) and skin is golden and crispy.
For extra crispiness, broil for the last 3–5 minutes, watching closely.
Serve:
Spoon pan juices over the top.
Garnish with fresh lemon slices or chopped parsley if desired.
