Lemon & Garlic Chicken Quarters

Ingredients:
4 chicken leg quarters (thigh & drumstick)

6 cloves garlic, minced

2 lemons (zest and juice)

3 tbsp olive oil

1 tsp salt

1/2 tsp black pepper

1 tsp dried oregano (or thyme/rosemary)

Optional: 1/4 tsp crushed red pepper flakes

Fresh parsley (for garnish)

Instructions:
Prep the Marinade:

In a bowl, mix together garlic, lemon juice, lemon zest, olive oil, salt, pepper, oregano, and red pepper flakes (if using).

Marinate the Chicken:

Place chicken quarters in a large resealable bag or dish.

Pour the marinade over the chicken. Rub it in well to coat evenly.

Cover and refrigerate for at least 1 hour (or up to overnight for deeper flavor).
