Kielbasa Sausage Cheesy Potato Casserole
1. Preheat your oven to 350°F (175°C).
2. In a large pot, boil the cubed potatoes until tender but not falling apart, about 10 minutes. Drain and set aside.
3. In a skillet, melt the butter over medium heat. Add the chopped onion and cook until soft and translucent, about 5 minutes.
4. Add the sliced kielbasa to the skillet and cook until lightly browned, about 8 minutes.
5. In a large mixing bowl, combine the cooked potatoes, kielbasa-onion mixture, cream of mushroom soup, sour cream, and half of the shredded cheddar cheese. Season with salt and pepper to taste.
6. Transfer the mixture to a greased 9×13-inch baking dish. Sprinkle the remaining cheddar cheese evenly over the top.
7. Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and the cheese is melted and golden.
8. Garnish with chopped parsley if desired, and serve warm.
Variations & Tips
For a bit of a twist, try adding some diced bell peppers or a handful of fresh spinach to the mix before baking. If you prefer a different kind of sausage, smoked sausage or andouille work wonderfully in this dish. For a crispy topping, consider mixing breadcrumbs with a little melted butter and sprinkling on top before baking.
