In the same skillet, cook the sliced steak with a little salt, pepper, and garlic powder until browned (2–3 mins per side). Don’t overcook—it’ll continue cooking when baked.

Assemble Roll Ups:

Preheat oven to 375°F (190°C).

On a parchment-lined baking sheet, lay out the provolone slices.

Bake the cheese slices for 2–3 minutes until just melted and pliable.

Remove from oven, add a spoonful of beef and sautéed veggies onto each slice, then roll up tightly.

Bake (Optional):

Place the roll-ups seam-side down and bake for another 5 minutes to help them set.

Serve:

Garnish with chopped parsley or serve with a keto-friendly dip like spicy mayo, ranch, or aioli.
