I made this for a potluck, and everyone kept talking about how great it was.

1 pound Brussels sprouts, trimmed and halved
4 slices thick-cut bacon, chopped
2 tablespoons olive oil
Salt to taste
Freshly ground black pepper to taste
1 tablespoon balsamic vinegar (optional)
Directions
Preheat your oven to 400°F (200°C).
Spread the chopped bacon on a large baking sheet and place it in the oven for about 5 minutes, or until the bacon starts to render its fat.
Remove the baking sheet from the oven and add the halved Brussels sprouts. Drizzle with olive oil, and season with salt and pepper.
Toss the Brussels sprouts and bacon together until they are evenly coated with the oil and seasonings.
Spread the mixture out in a single layer on the baking sheet.
Roast in the oven for 20-25 minutes, stirring halfway through, until the Brussels sprouts are crispy and caramelized, and the bacon is cooked to your liking.
Optional: Drizzle with balsamic vinegar before serving for an added layer of flavor.
Variations & Tips
For a sweeter twist, add a handful of dried cranberries or a drizzle of maple syrup before roasting. You can also sprinkle some grated Parmesan cheese over the Brussels sprouts during the last 5 minutes of roasting for a cheesy finish. If you prefer a spicier kick, add a pinch of red pepper flakes or a dash of hot sauce before serving. For a vegetarian version, omit the bacon and add a teaspoon of smoked paprika to mimic the smoky flavor.
