Honestly, my husband loves this dish!

1. In a large mixing bowl, combine the ground beef, grated Parmesan cheese, bread crumbs, and milk.
2. Add the minced onion, minced garlic, beaten egg, fresh parsley, dried oregano, dried basil, salt, and black pepper. Mix well until all ingredients are well combined.
3. Shape the mixture into a loaf and place in a medium slow cooker.
4. If desired, spread a thin layer of marinara sauce over the top of the meatloaf for added flavor and moisture.
5. Cover and cook on low for 6-8 hours or on high for 3-4 hours, making sure the meatloaf is cooked through and reaches an internal temperature of 160°F.
6. Carefully remove the meatloaf from the slow cooker when done and let it rest for a few minutes before slicing.
7. Serve warm, garnished with additional fresh parsley, if desired.
Variations & Tips
For a lighter version, try using ground turkey or ground chicken instead of beef. You can also experiment with adding different herbs like thyme or rosemary for a unique twist. To make it gluten-free, replace the breadcrumbs with gluten-free breadcrumbs or ground oats. If you prefer a spicier kick, add a pinch of red pepper flakes to the mixture. Finally, you can add finely chopped vegetables like bell peppers or carrots to add a touch of sweetness and extra nutrients to the meatloaf.
