Chiacchiere Recipe
Chiacchiere, also known as angel wings, are crispy, fried Italian pastries traditionally enjoyed during Carnival. They are light, airy, and sprinkled with powdered sugar for a sweet treat.
Ingredients
2 cups (250 g) all-purpose flour
2 tbsp granulated sugar
2 large eggs
2 tbsp unsalted butter, softened
2 tbsp white wine or grappa (optional, for flavor)
1 tsp vanilla extract
1/2 tsp salt
Vegetable oil (for frying)
Powdered sugar (for dusting)

1. Make the Dough
In a large bowl, mix the flour, sugar, and salt.
Add the eggs, softened butter, wine (if using), and vanilla extract. Mix until a dough starts to form.
Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.
Wrap the dough in plastic wrap and let it rest for 30 minutes at room temperature.
2. Roll Out the Dough
Divide the dough into smaller portions for easier handling.
Roll each portion very thin (about 1-2 mm) using a rolling pin or pasta machine. The thinner the dough, the crispier the chiacchiere will be.
Cut the dough into rectangles (about 4×2 inches) and make a small slit in the center of each piece.
3. Fry the Chiacchiere
Heat vegetable oil in a deep pot to 175°C (350°F).
Fry the chiacchiere in small batches, turning them once, until they puff up and become golden brown (about 1-2 minutes per side).
Remove with a slotted spoon and drain on paper towels to remove excess oil.
4. Dust and Serve
Once cooled slightly, generously dust the chiacchiere with powdered sugar.
Serve and enjoy!
Tips
For extra crispness, make sure the oil is hot enough before frying.
You can flavor the dough with lemon zest or a pinch of cinnamon for a twist.
