Hawaiian Cheesecake Salad

Make the cheesecake mixture:

In a large bowl, beat the softened cream cheese until smooth.

Add the dry pudding mix and vanilla extract.

Slowly add in the heavy cream or milk while mixing until smooth and creamy. It should be thick and fluffy.

Fold in the fruit:

Gently fold in the drained pineapple, mandarin oranges, strawberries, and banana (if using).

Add the mini marshmallows and coconut if using.

Chill:

Refrigerate for at least 1 hour to allow the flavors to blend and the salad to firm up a bit.

Top and serve:

Sprinkle with chopped macadamia nuts or pecans before serving for a little crunch.

Tips:
Add bananas just before serving to keep them from browning.

You can swap or add in other tropical fruits like kiwi, mango, or papaya.
