Hands down, my fave lunch ever!

1/2 cup celery, chopped
1/4 cup red onion, finely chopped
1/2 cup red grapes, halved
1/4 cup sliced almonds
Salt and pepper to taste
4 croissants, split
Lettuce leaves
Directions
In a large bowl, combine the diced chicken, mayonnaise, Greek yogurt, and Dijon mustard. Mix until well combined.
Add the chopped celery, red onion, halved grapes, and sliced almonds to the bowl. Stir gently to incorporate all ingredients.
Season the chicken salad with salt and pepper to taste. Adjust the seasoning as needed.
Split the croissants in half and place a lettuce leaf on the bottom half of each croissant.
Spoon the chicken salad mixture onto the lettuce, dividing it evenly among the four croissants.
Top with the other half of the croissant and serve immediately.
Variations & Tips
For a healthier twist, substitute the mayonnaise with more Greek yogurt or use a light mayo. You can also add chopped apples or dried cranberries for a sweet touch. If you prefer a bit of spice, try adding a pinch of cayenne pepper or some chopped jalapeños. For a nut-free version, omit the almonds or replace them with sunflower seeds.
